Method.
- Start with the eggs. Separate the yolks from the whites and set the whites aside: you’ll be whipping them in a moment.
- Egg yolks and sugar. Give the yolks and sugar a really good mix. Keep going until the sugar has completely dissolved.
- Time for the mascarpone. Add it to the yolk and sugar mixture and combine well.
- Chocolate, if you fancy it. If you’re using chocolate, add it to the mixture in pieces.
- Whipping the egg whites. Take the whites you set aside, whip them to stiff peaks and fold them into the mixture.
- Make sure the coffee is cold! Let it cool completely before using it: the heat would deflate the whipped egg whites.
- The first layer. Dip the Pavesini biscuits in the cold coffee and arrange them to form the first layer.
- Now for the cream. Add some of the cream over the layer of Pavesini.
